These are recipes that have as a common denominator a \u201ctreasure\u201c, that is, the ingredient par excellence of the territory to which they belong, sublimely reinterpreted by the great Italian Star Chefs.<\/p>\n
The \u201ctreasure\u201d of this recipe is Barolo wine.<\/p>\n
In this capsule you will find egg tagliatelle and ready-made sauce with sausage and Barolo wine by Andrea Larossa.<\/p>\n
It is a dish from the culinary tradition of the Langhe, which Andrea has always loved to revisit in his innovative cuisine. With this recipe he has managed to make a sauce with powerful ingredients, such as pork sausage, Barolo wine, garlic and onion, elegant and extremely refined. The notes and aromas of this dish take you directly to the farmhouses of the 19th century Langhe farmers, among vineyards and farmyard animals, where this magnificent recipe was usually consumed on Sunday lunch.<\/p>\n
How do you cook it? Cook the pasta and pour in the sauce. And that\u2019s it!<\/p>\n
\u00a0THE PREPARATION<\/p>\n
1.\u00a0Pour 2.5 litres of water into a pot, add 25 g of coarse salt, bring to the boil.<\/p>\n
2.\u00a0When the water boils, throw in the egg tagliatelle and cook for 5 minutes.<\/p>\n
3.\u00a0In the meantime, pour the jar of sausage and Barolo sauce into a pan and heat gently over low heat for 2 minutes, then turn off the heat.<\/p>\n
4.\u00a0After 5 minutes, drain the egg tagliatelle, keeping a little of the cooking water.<\/p>\n
5.\u00a0Pour the tagliatelle into the pan with the sauce and mix everything well (if necessary, add a little cooking water to achieve the right level of creaminess).<\/p>\n
\u00a0<\/p>\n
PLATING<\/p>\n
1.\u00a0Use deep plates.<\/p>\n
2.\u00a0Take a ladle and a fork.<\/p>\n
3.\u00a0Use a fork to pick up a portion of tagliatelle from the pan and wrap it in the ladle to create the shape of a nest.<\/p>\n
4.\u00a0Gently place the nest in the center of the plate.<\/p>\n
5.\u00a0Finish the plate with a drizzle of extra virgin olive oil.<\/p>\n
6.\u00a0Wipe the edge of the plate with a cloth to remove any smudges.<\/p>\n
